The Long Table serves one or two dishes each evening and allows guests to pay what they can afford. The restaurant combines affordable dining with apprenticeships, local sourcing and community partnerships. Last year, the venue served 38,305 meals, with some customers paying extra to support others.

Founded by fifth-generation baker Tom Herbert, The Long Table operates from Brimscombe Mill and has expanded to a second site in Cirencester. Herbert now hopes to help other communities adapt the model rather than pursue large-scale expansion.
